“Brewing potent, 18% alc/vol, “Tonic Wine” using natural yeasts, fruits, roots, berries, herbs, spices and flowers. My wines use natural yeast fermentation, with minimal, initial sterilization. They are not fortified, do not have added caffeine or other manufactured industrial stimulants or preservatives. My understanding is that this how “monks” used to make proper, tonic wines, pre-commercialization and pre-industrialization and pre-profiteering. My wines are designed to be “healthy” to drink, in moderation, with minimal cause for hang-overs.”
